Happy one month anniversary sweet followers!! But more importantly, happy TACO TUESDAY.

This week on the blog I’m highlighting some of my favorite parts of Mexico and the Mexican culture gearing up for Cinco De Mayo on Friday. Today I’ve got you a healthier version of Mexican Street Corn because:

  1. It’s ridiculously delicious and I needed to find a guilt-free version
  2. It’s ridiculously easy
  3. It will definitely impress your party guests like woah

Then tomorrow I’m taking you to beautiful Tulum with my travel guide (where we went on our mini-moon) and then spicing it up on Friday with some skinny & spicy margaritas and bar cart inspiration. Estan listos (anyone?!)

Does anybody else celebrate Taco Tuesday every week, or is it just me and my husband?! We meal plan on Sundays every week (which helps us stay healthy and on budget at the grocery store) and every week Tuesday is planned. Non-negotiable. Done deal.

But our Taco Tuesday is not your typical Taco Tuesday…… there’s rarely drinks involved (because we try to not drink during the week) and our tacos are ground turkey and minimal dairy because #healthy. But GUYS, I swapped out our taco meat for ground turkey about a year ago (much to my husbands initial dismay) and honestly I think we both like it better! It’s such an easy swap, so much healthier for you and because taco seasoning….. you cannot even tell a difference. So make the swap. Seriously.

We also try to go minimal to no dairy during the week because honestly dairy is generally not that good for you at all, so we splurge a little on Taco Tuesdays but we get organic shredded cheese from Whole Foods so I feel like at least it’s got a little less of the bad stuff going on in it (and it’s really these little things that contribute to wellness yall). We use whole wheat tortillas, saute bell peppers in the pan with the meat for a little veggie addition and it’s all so good I’m hungry and so glad its on the menu for tonight.

And if you feel like I’ve ruined Taco Tuesday with these swaps YOU’RE WRONG.

Now about this corn. Have you ever had Mexican street corn? It’s been popping up on menu’s lately and every time I see it I can’t NOT order it. But then I looked up the recipe and WOMP WOMP. Not that I was expecting it to be full of unicorn dust and calorie burning magical spices but DANG IT. So I considered it a challenge.

And I tried a thing and yall did it work. My skeptic husband, who likes to be very honest when I take things too far with my healthy swaps, loved it. So I made it again to be sure, and made my willing sister try it and PEOPLE WE ARE ONTO SOMETHING.

Best part? It’s easy. Silly easy. In fact, the whole meal is so easy, that’s another reason it’s a go-to Tuesday meal.

One caveat, true Mexican Street Corn calls for Cotija cheese. And cotija cheese is awesome. But it’s also apparently very exclusive and I couldn’t find it in any grocery stores or the black market so I gave up and swapped it for parmesan which is a close variety and definitely still works. If you find cotija cheese, drop a line to ya girl because COLOR ME IMPRESSED.

 

MEXICAN STREET CORN & HEALTHIER TURKEY TACOS

INGREDIENTS

For the Corn

  • Yellow Corn
  • 1/2 cup Greek Yogurt (depends on how much corn you make but this should be good for 4)
  • 2 teaspoons garlic powder
  • Chili Powder
  • Lime
  • Black Pepper
  • Coitja cheese or Parm

For the Tacos

  • 1 lb ground turkey
  • Taco Seasoning
  • Yellow, Red and/or Orange bell pepper (you won’t use all of them, just as many as you’d like with the mix)
  • Whole Wheat Tortillas
  • Assorted toppings: Cheese, sour cream, avocado, DO YOU

INSTRUCTIONS

CORN

  1. Preheat the oven to 400
  2. Put corn into oven still in husks or wrapped tin foil and roast for 40 minutes
  3. While corn is roasting, mix together greek yogurt and garlic powder
  4. When corn is done carefully shuck (I use an oven mitt)
  5. Brush corn with the greek yogurt mix
  6. Sprinkle chili powder, black pepper over all sides
  7. Squeeze some lime over each piece
  8. Sprinkle or coat in shredded/grated cheese
  9. ENJOY

TACOS

  1. Heat pan on medium-high with either some PAM or a little olive oil
  2. Brown ground turkey meat adding a little salt and pepper to season
  3. Once turkey is cooked, add taco seasoning and a little water to mix
  4. Add in bell peppers and cook to your likening
  5. Put together tacos like you MEAN IT

PRO TIP: Spread your sour cream onto your tortilla before adding in the goods, you’ll use less and its evenly distributed.

 

I am so glad we are having this tonight, and every Tuesday for the rest of my life.
