Are you ready for another installment of a Meatless Monday?! I’m honestly surprising myself at this point with my ability to make meatless recipes, but it just goes to show you – it’s not THAT hard and is still totally YUM.

This week we are venturing back into the world of Jackfruit – that mystical, magical creature of a fruit that is low in sugar, calories and fat and high on protein and after a boil, pulls apart like any ol’ meat would do. Sounds ridiculous right? Which is why I tried it again (get all the deets on the first jackfruit recipe here)- this time in what I can only describe as the yummiest most convincing non-meat bbq sandwich I could ever imagine having. I mean do you see that thing?!

If you’re behind on the Meatless Monday concept and have no idea what I’m talking about, hop on over to my post here  to get the full low down. It’s basically the best thing you can do for your health and wallet (I mean more money for clothes right?!) and it’s not as hard or boring as I previously believed. And if you’re reading this thinking “but no protein – no way?!”, stop fooling yourself, you can still get in your protein fix without meat.

I got inspired to make try this meal after my first successful experience with Jackfruit tacos. The way the meat of the fruit pulled apart reminded me so much of pulled pork I knew it would be a match made in heaven. The interesting part about this recipe is that I actually DO NOT like coleslaw at all, but when I was dreaming up this masterpiece, I thought about this kale-broccoli slaw mix (just raw veggies no dressing) I’d been using for other things and how it would be good to get in some greens into this meal. Since I also knew I was doing my signature spicy sweet potato fries with  the sammy, I wanted something a little tangy to counter the sweetness of the bbq sauce and sweet potato fries. And so – this mayo free kaleslaw concoction was born to be the perfect tangy, crunchy topping on this massive pile of bbq goodness.

This is honestly I perfect weeknight meal. It’s healthy, YUMMY, and takes about 30 minutes to make which is just about all I could want in my life during the week. For my vegan peeps out there, substitute the greek yogurt I use for the kaleslaw for an avocado based mayo and this meal is perfect for you too!

 

BBQ JACKFRUIT SAMMIES WITH KALESLAW

INGREDIENTS

  • 1 can jackfruit ( I get mine from Trader Joes)
  • Your favorite bbq sauce (look for one with low sugars)
  • Your favorite buns (I used whole grain soy-free dairy-free ones)
  • Broccoli Kale Mix (I got the mix from Trader Joes but Whole Foods has one as well)
  • 2 cups plain greek yogurt
  • 2 tsp lemon, juice
  • 1 tsp garlic powder
  • 1/4 tsp black pepper
  • 2 Sweet Potatoes, cut into fries
  • My Special Spice Mix (find it at the bottom of the link)
  • Olive Oil

 

INSTRUCTIONS

  1. Preheat oven to 400
  2. Season sweet potatoes with olive oil and my special spice mix tossing with seasoning
  3. Spread onto a baking sheet and bake for 30 minutes
  4. While your sweet potatoes bake, drain your jackfruit and put it into a sauce pan with water to cover and boil for around 20 minutes or until a test piece pulls apart easily
  5. While the sweet potatoes bake and jackfruit boils, mix together your yogurt, lemon juice, garlic powder and black pepper into a mixing bowl. Taste to make sure it garlicky enough for you and if it isn’t, go on with ya bad self and add a little more garlic powder
  6. Add in your kale slaw mix and coat evenly with the sauce. Set aside
  7. Once your jackfruit is pulling apart when tested, drain water and put back into the sauce pan
  8. Shred the jackfruit into pulled meat consistency
  9. Add bbq sauce (however much makes your sweet little heart happy) and mix until well coated
  10. Don’t forget about those sweet potato fries, so pull them out and let them cool while you put together your masterpiece
  11. With the oven off, but still hot, throw in your buns for a minute to warm them up
  12. Build your delicious sandwich with the bbq jackfruit meat, pile on the kaleslaw goodness and take a pic because it looks ridiculously good
  13. Add your sweet potato fries to your plate and enjoy the amazing meal you made. Like fo real
