Every week we buy bananas and without fail every weekend I have a few out on the counter that are brown that we didn’t get to. With this protein muffin recipe in my back pocket, I no longer debate those brown bananas for days until finally throwing them out (you know you do it too). Now they serve as the opportunity to make these tasty and healthy protein muffins that give me life during the week and are the perfect snack between work and the gym.

When my friend Erica first gave this recipe to me, I was intrigued. Muffins with protein? A use for brown bananas? PEANUT BUTTER AND CHOCOLATE CHIPS?! They sounded too good to be true.

The first week I made them I ate half of one everyday after work and before the gym ; that critical time of the day when I seriously debate going straight to bed or living a life more fulfilled by going to the gym and making a healthy dinner….the struggle is real. I found myself really looking forward to them though and they certainly helped to curb my ravenous hunger that always seems to peak at this time. I shared the recipe with my mom who admittedly didn’t actually love them at first when she made them. I was naturally shocked and appalled and considered seeking emancipation, but then she redeemed herself and texted me several times throughout the week to let me know how much they had grown on her and how much she looked forward to them and had shared them with my dad who equally enjoyed them; so I canceled the lawyer.

The greatest part about this recipe is how stinking easy it is. You measure out the ingredients, put them into a blender (except for the chocolate chips) and bake this concoction to get these wonderful fluffy little treats. And since I’m sometimes awful at getting in good protein at lunch, this is just another way to fuel my body with what it needs (which definitely includes chocolate). BRB, gotta go check on the bananas I’m forcing to brown ASAP so I can make these! What are your plans for the weekend? Make sure to schedule these in so you can start the week right!

PROTEIN MUFFINS

INGREDIENTS

  • Two large brown bananas
  • 1 cup creamy peanut butter (I used organic unsweetened)
  • 2 eggs
  • 1/4 cup honey
  • 4 tablespoons protein powder (I used whole foods brand whey protein)
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips (or regular ones, YOU DO YOU)

INSTRUCTIONS

  1. Preheat oven to 375 (original recipe calls for 400 but I tried it at 375 and they turned out better)
  2. Combine all ingredients except for the chocolate chips into a blender. Blend mixture for about one minute or until completely smooth
  3. Stir in chocolate chips
  4. Spray a muffin tin with cooking spray and scoop batter into muffin tin
  5. Bake 13-15 minutes or until muffins have set
  6. EAT THAT ISH UP
