Fall Favorite – Healthy Chili

Is there anything better than a crisp fall day and a big bowl of yummy chili with a little bit of a kick? Well I unfortunately can’t do much in the ways of the 80 degree weather Florida insists on posting but I CAN serve you up some of the best and healthiest chili you ever did taste. So turn down your AC, put on a fall sweater and make this chili ASAP.

If you’re still struggling to convert your husband/family/whoever to a believer that healthier versions of food can still be absolutely delicious, make this. Before this meal my husband was still all weary of me swapping out lean ground turkey for beef everywhere I could, but afterwards he was a true BELIEBER…. I mean believer. Baby, baby, baby OHHHHHH

 

HEALTHY CHILI

INGREDIENTS

  • Olive Oil (the real stuff)
  • 1 lb ground turkey
  • 1 large yellow onion diced
  • 1 packet of chili seasoning (look for low sugar ones where you can actually understand the ingredients)
  • 3 Bell peppers (diced – I like green and red for chili)
  • Red Pepper Flakes
  • 2 cans chili beans
  • 1 (26oz) crushed tomatoes (I use Pomi)
  • 1 (26oz) strained tomatoes (Pomi)
  • Salt and Pepper

INSTRUCTIONS

  1. Bring large pot to medium high heat
  2. Add Olive oil
  3. Add onion and sauté for a few minutes
  4. Add in diced bell pepper and red pepper flakes and sauté for a few minutes or until onions are translucent
  5. Move onion and bell pepper to the edges of the pan and add in ground turkey in the middle on the heat to brown
  6. Once the turkey is browned mix with onion and peppers and add 1/2 tsp salt and pepper
  7. Add in tomatoes stirring to combine
  8. Add in chili beans and chili seasoning mix
  9. Stir to combine and lower heat to medium low
  10. Simmer with top on for 20 minutes stirring occasionally and lowering heat if needed
  11. Add sale and pepper to tastes
  12. Allow to simmer longer if you have time or if you are impatient serve with crackers or cheese or sour cream or whatever makes your heart happy and tummy full
