Quick, healthy, weeknight meals are starting to be my THING. With limited time at night and a desire to eat healthy (two things that normally don’t go together) I’ve really made it my mission to figure out some great and easy meals to add to my Weeknight Meals List (and, yes, I have a note in my phone with all my ideas for weeknight meals so I never run out – do it).

Open your phone notes and type this one in – Chicken Lettuce Wraps. Takes about 20 minutes tops, tastes ridiculously good, and is SO stinking healthy you’ll wonder why you haven’t been making these your whole life.

I first came across Chicken Lettuce wraps at the Cheesecake Factory years and years ago. They were considered an appetizer and were probably around 24394236723 calories each even though it’s basically nothing more than chicken and lettuce (I’m paranoid that everything at Cheesecake Factory is 23424328439 calories after reading so many articles about their entrees – it’s ridiculous I know.) The first time I had them, I knew I’d have to recreate them on my own and, naturally, put my own twist on them.

When we were being super lean right before our wedding I pulled this baby out of my memory arsenal and made them knowing they didn’t involve breads/pastas/starches and therefore had to be #allthehealthys. Now they are a go-to easy weeknight dinner that takes no time, is made up of things I typically have in my fridge or can easily reuse throughout the week in other meals, and makes the hubs happy #WINNING.

I’d love to pretend that this was all I made and my husband was happy and full and satisfied but he requires sides so I also whipped up a side of cauliflower fried rice (sans chicken) in about 5 minutes and he loved all of this so much the left overs were gone at the earliest chance the next day.

CHICKEN LETTUCE WRAPS

INGREDIENTS

  • 1 lb Ground Chicken (go organic if you can)
  • 2 handfuls matchstick carrots
  • 1-2 bell peppers diced (red, orange and yellow have the most nutrients – I do a mix of the three)
  • 5 cloves garlic, minced
  • 1-2 tablespoons coconut oil
  • 1-2 tablespoons liquid aminos or soy sauce
  • Salt & Pepper
  • 1-2 tsp Red pepper flakes (depending on your heat tolerance)
  • Head of Butter Lettuce

 

INSTRUCTIONS

  1. Bring a pan to medium high heat and add coconut oil to melt
  2. Add in red pepper flakes and garlic and saute until fragrant
  3. Add in chicken and matchstick carrots  and a dash of salt and pepper and brown chicken to cook through
  4. Once chicken is cooked, add in bell peppers and cook for five minutes
  5. Add coconut aminos or soy sauce and stir to mix
  6. Season with salt and pepper to taste
  7. Wash and dry butter lettuce pieces
  8. Portion mixture into the lettuce wraps and be amazed how quick you made this delicious meal
